The Last Supper

Last night we said goodbye to not only to a memory filled year, but also a diet full of sugar, grains and processed foods.  About a month ago, my husband suggested that we start a paleo challenge for thirty days starting January 1st.  My jaw hit the floor.  My grain eating, chocolate loving, sugar is a food group husband had fought me every time I had suggested clean eating in the past two years and now this was his idea.  I pounced at the opportunity.  During the previous six months, my diet had turned to garbage.  I desperately needed to reset and it would make life so much easier if he was on board.  Yesterday we planned our meals for the next six days, made the shopping list and ventured out to the store.  Let me tell you, shopping is so much faster (and less exciting) when you can only shop in the produce and meat departments.  I couldn’t help but laugh when Jon figured out that some of his staple pantry items were being eliminated.  And even when I offered that he could back out of our challenge, he reaffirmed his commitment to eating clean for the next 30 days.  We stopped at Meatheads and picked up our last supper and headed home where not a single cajun fry was wasted.  As the clock approached midnight, Jon poured one last beer and dished up some leftover desserts from Christmas.  3, 2, 1… goodbye 2014. Goodbye sugar and grains.  Hello 2015… clean eating day 1.

Now, before you take a swig of your haterade and call the paleo police, let me first off preface this with the fact that I know that our diet isn’t going to be perfect. I am not claiming that everything that we are eating is paleo.  Hell, I’m sure some people would argue that none of it is.  Awesome.  Call it what you want.  I don’t care.  Our goal is to clean up our diet and make smarter, healthier choices in 2015.  At the end of thirty days, we will reassess where we are at, make adjustments and continue to move forward.  Hopefully this blog will help keep us accountable and entertain a few of you along the way.

  • Scrambled Eggs
  • Lemon Basil Drop Biscuits**
  • Strawberries, Blueberries, Orange Slices
  • Black Coffee

Recipe for Paleo Drop Biscuits:

I borrowed this recipe from Paleo on a Budget.  They were fantastic.  I added 3 drops of Young Living Lemon Essential Oil and about 3/4 tsp. of dried basil but you can substitute any herbs that you like in place.
